Heat butter in pot and cook sweet beet for 12 minutes. Then add soup nicely coloured, soup will be ready then add vinegar, salt, pepper according to need and then take out in bowls, before serving add 1 spoon blended yogurt.

December winters are here, short days, dust free air, increasing dryness and cold nights are its indications. We use different fruits and vegetables of this season in the market also they include sweet beet, reddish, carrots etc. This provides you with health, sweet beet is found in ocean Rome. Its seed reached here in 21st Century in Northern Europe, as said by their herbalists it provides us taste and flavours.  Its leaves have also benefits for health. We also use sweet beet as food in villages and cities.  Its leave contains vitamin A, protein A, C and iron content, and its root contains protein A, B and C, calcium and iron. Its gives our body immune system strong and helps us to fight against harshness of winters.

Sweet beet as medicine: If we treat it as medicine it will increase our red blood cells. It has been proven by an experiment if leukemia patients eat up 1 kg of sweet beet along with the medicine it benefits them a lot because it can get rid of cancer due to a chemical that is found in it called leucopenia. It's not necessary to eat it at once, you can eat it in intervals but sweet beet must be fresh. You can extract juice of it can help you to cure kidney and bladder diseases and helps in lowering, swelling of these organs. It helps in thyroid also because it contains sugar; it helps in joint pain also if a person doesn't have diabetes.

Russian sweet been soup: Take fresh sweet beet 900gm, 1 small cabbage,  yakhni (meat stock) of meat 10 cups, butter 1 tablespoons,  vinegar,  salt,  black pepper according to taste,  blended yogurt 6 tablespoons,  coriander leaves. Peel all sweet beet except 2 which remain uncut, cut rest in small pieces,  cut cabbage into small pieces add coriander leaves into yakhni (meat stock) and sweet beet,  cabbage pieces cook them on medium heat for 2 hours. When they are tender sieve them, remaining sweet beet must be shredded. Then in a woke heat butter and add sweet beet a cook for 12 minutes then add soup and salt, vinegar, pepper and yogurt 1 teaspoon, you can add green chilies also, this soup will be sufficient for 6 people.

Romanian sweet beet soup: Take 6 sweet beet with leaves,  chicken stock 8 cups,  onion chopped one and half cup,  yogurt free from cream one and half cup,  reddish 1 cup, lemon juice 2 tablespoons,  soya leaves 2 tablespoons,  coriander leaves 1 tablespoon, black pepper as required,  salt according to the taste. Cut sweet beet, heat chicken stock in pan then add sweet beet, onion, reddish and leaves of sweet beet and cover it with lid and cook it for 20 minutes. When vegetables become tender add yogurt, lemon juice, soya leaves, coriander leaves, salt and black pepper.
